'Making sure we have all the lights and staging, and all that stuff ready, and just making sure we all have our ducks in a row,' Christopher said.
Ernest Brown, the casino's director of food and beverage, is behind all the food for the celebration.
On Friday, his staff was preparing the filet and shrimp for their New Year's Eve dish. Brown said it takes about a week to get everything ready.
'We bring all the meats in. We hand butcher everything, prepare the shrimp,' Brown said.
